In a bowl mash the bananas, then add the maple syrup, coconut oil, the vanilla and almond extract and finally add the cinnamon.Mix all together and add everything to the dry ingredients.
Pour it into a baking sheet and spread it into an even layer.
Bake it for 30 min. Check the granola often to see if its not burning. Every oven its little different.
In a separate baking sheet, toast the coconut flakes for 5 min. ( they can burn quickly).
If you like the granola to have chunks, let it cool for at least 20 min, then you can break it down in pieces.
Add the slightly toasted coconut flakes and mix into the granola.

Store the granola in an airtight container. It will last for 3 to 4 weeks.
