Healthy Granola

Ingredients
  

  • 6 cups Rolled oats
  • 1 cup Pumpkin seeds 
  • ¼ cup Chia seeds
  • 1 ½ cup Chopped almonds
  • 3 bananas
  • cup Coconut oil
  • cup Coconut flakes
  • ½ cup Pure maple syrup or honey
  • 1 tbsp Almond extract
  • 1 tbsp Vanilla extract
  • 1 tbsp Cinnamon

Instructions
 

  • Preheat the oven at 335 F
  • Mix together all the dry ingredients.
  • In a bowl mash the bananas, then add the maple syrup, coconut oil, the vanilla and almond extract and finally add the cinnamon.Mix all together and add everything to the dry ingredients.
  • Pour it into a baking sheet and spread it into an even layer.
  • Bake it for 30 min. Check the granola often to see if its not burning. Every oven its  little different.
  • In a separate baking sheet,  toast the coconut flakes for 5 min. ( they can burn quickly).
  • If you like the granola to have chunks, let it cool for at least 20 min, then you can break it down in pieces.
  • Add the slightly toasted coconut flakes and mix into the granola.
  • Enjoy!

Notes

Store the granola in an airtight container. It will last for 3 to 4 weeks.
